Seriously Good Chunky Granola
The Nourished Bite
Ingredients:
- 1.5 cups rolled oats
- ½ cup large coconut flakes
- ½ cup slivered almonds
- Handful of walnuts roughly chopped
- 1 tbsp coconut sugar
- 1 tbsp chia seeds
- 1 tbsp hemp seeds
- Dash of ground cinnamon
- Pinch salt
- 2 tbsp coconut oil melted
- 1.5 tbsp pure maple syrup (can substitute with rice malt syrup or agave)
- Handful goji berries
- ½ banana mashed
Method:
- Preheat oven to 180 degrees
- In a large mixing bowl combine all ingredients – oats, coconut flakes, slivered almonds, walnuts, coconut sugar, chia seeds, hemp seeds, cinnamon, salt, coconut oil, rice malt syrup, goji berries and mashed banana. Stir all ingredients until well combined
- Line a tray with baking paper and evenly spread granola mixture
- Bake for around 6-8 minutes until golden
- Allow to cool and break into large chunks
Tip: Store in an airtight container in the cupboard and consume within a week.
