Chunky Vegan Granola

Ingredients:

  • 1.5 cups rolled oats
  • ½ cup large coconut flakes
  • ½ cup slivered almonds
  • Handful of walnuts roughly chopped
  • 1 tbsp coconut sugar
  • 1 tbsp chia seeds
  • 1 tbsp hemp seeds
  • Dash of ground cinnamon
  • Pinch salt
  • 2 tbsp coconut oil melted
  • 1.5 tbsp pure maple syrup (can substitute with rice malt syrup or agave)
  • Handful goji berries
  • ½ banana mashed

Method:

  • Preheat oven to 180 degrees  
  • In a large mixing bowl combine all ingredients – oats, coconut flakes, slivered almonds, walnuts, coconut sugar, chia seeds, hemp seeds, cinnamon, salt, coconut oil, rice malt syrup, goji berries and mashed banana. Stir all ingredients until well combined
  • Line a tray with baking paper and evenly spread granola mixture
  • Bake for around 6-8 minutes until golden
  • Allow to cool and break into large chunks 

Tip: Store in an airtight container in the cupboard and consume within a week.
